Investigations of triolein under high pressure

Investigations have been performed to demonstrate phase transitions in triolein subjected to high hydrostatic pressure. During compression, carried out at room temperature, sharp changes of volume in the investigated samples were detected at about 320 MPa. During decompression a giant hysteresis of this phenomenon was observed. A large decrease of permittivity during changes of volume, connected with phase transition, was observed. A phase diagram for the pressure range up to 1 GPa is proposed. The dependence of static permittivity and dielectric loss as a function of applied pressure and their correlation with volume changes are presented.
